Brown Sugar Bacon Wrapped Weenies

Oh my…..they are soooooooo good.

And gosh darn it…..they are pretty easy to make too! 

Here’s what you need:

2 packages of lil’ smokies

2-3 packages of bacon, it depends on if you get thick cut or regular

Brown sugar, about 2-3 cups

Here’s what you do:

Preheat the oven to 425 degrees.

Cut the bacon in half.  Wrap it around a weenie and put it in pan.

After you have wrapped all the weenies generously sprinkle with brown sugar.

Bake at 425 degrees for about 25 minutes or until the bacon is the desired crispness.

It’s a great appetizer to take to a party!

Cinnamon Sugar Roasted Pecans

I made this recipe for the first time for our Bake-N-Take 2014 which is just a gathering of some of the women in our family for a cookie exchange luncheon kind of thing.  It’s informal and fun and I look forward to it every year. 

I usually make Mexican Wedding Cookies (I’ll share that recipe soon) and some kind of cookie bar type recipe but this year I mixed it up a bit and tried roasting some pecans instead of a cookie bar.  Here’s the recipe I used and if you try it, let me know how yours turned out!

Here’s what you need:

  • 1 lb of pecans
  • 2 egg whites
  • 2 teaspoons vanilla
  • 2 c sugar
  • 1/2 t salt
  • 2 t cinnamon

Here’s what you do:

  1. Preheat oven to 250 degrees and lightly grease with baking spray a jellyroll pan. 
  2. Lightly beat the egg whites until frothy but not stiff. Add the vanilla and lightly beat again.  Add the nuts, and stir until well coated.  Mix the sugar, salt, and cinnamon, and sprinkle over the nuts.  Toss to coat and then spread evenly on the prepared pan.
  3. Bake for 1 hour in the oven, turning/stirring every 15 minutes.  Allow to cool and store in airtight containers.

Pretty easy recipe and makes a great gift!  🙂

Feta and Tomato Topped Chicken

This is one of my favorite “easy” recipes for a busy night.  A short ingredient list is always nice too! 😉

Here’s what you need:

4 boneless skinless chicken breasts

2 T balsamic vinaigrette dressing

1 t Italian seasoning

1 tomato cut into 8 slices

1/4 c crumbled feta cheese

Now I substituted lemon pepper seasoning for the Italian seasoning because it’s what I had on hand.  I also used a little more feta cheese than the recipe called for because gosh darn it, I love cheese!! 

And I don’t always measure things but use the measurements as a guideline or a suggestion if you will.  Much like the speed limit on the highway…but that’s another story….haha!!

Here’s what you do:

1.  Heat the oven to 350.  The recipe said to brush both sides of the chicken with dressing but with my bottle you could squirt it out so that’s what I did.  I figured less mess that way.  Sprinkle both sides with the seasoning and place in baking dish. 

2.  Bake for about 22 minutes on one side and turn over.  Bake for an additional 17 minutes and then top with tomato and cheese.  Bake for an additional 5 minutes.

I served it with dinner rolls and a pre-made lettuce and spinach side salad and added cucumbers and carrots.  Super easy and definitely a go-to recipe in my recipe box!
