Yes, bean sandwiches.
Yesterday it was cold in Dallas so I made beans and cornbread for dinner. I always make extra because I use them to make refried beans for my bean sandwiches.
When I make a pot of beans I don’t really add anything extra to it. I do add just a bit of salt but not very much as I am not a big fan of salt in general. This time I did have a ham hock on hand so I added that for flavor. I then take the beans that I am going to use and I drain them and then mash them with a potato masher. I add a bit of cheese and that’s it!
When I make my sandwiches I like to make two half sandwiches. Makes me feel like I am eating more than I really am.
